Featured Creator: Lindsey Merski- Cake Decorator

Meet Lindsey Merski 
Lindsey Merski received her training from The Academy of Culinary Arts. She has worked in multiple restaurants from Philadelphia to Atlantic city, but most of her fondant training was self taught. Although, she makes many cakes here at The Cake Boutique her favorite dessert to make is cookies. When making cookies for the holidays(or any occasion) she suggests, "make your dough in advance. You can roll the dough into logs, wrap with wax paper or parchment and then freeze." This will make the task seem less time consuming and tedious.

Of all the cakes Lindsey has made here at The Cake Boutique her favorite was "The Night Before Christmas" cake. This cake was what we call a DYOT, or "do your own thing", giving her the freedom to let her creativity fly on a theme she personally enjoyed. Sometimes the best cakes are those where we have creative freedom.


One thing that is misleading about the baking and decorating industry is that, "Cakes are not done in 30 minutes like portrayed on TV." A lot of time and work goes into creating these works of art. "It's not as glamorous as some people may think." Custom cakes take hard work and it isn't always easy! If you decide to try and make a custom cake at home a helpful tip is to "be sure to cool the cake completely before filling and icing. Refrigerators and freezers are a very important tool when working with all types of pastry." If all else fails, don't forget your local bakery ;) !
