Sharing a Recipe: Coconut Macaroon Cookies

It is that time of year when everyone is baking christmas cookies! We wanted to share with you a recipe of one of our favorite christmas cookies. These are not only a pretty cookie they are delicious and make cookies trays extra special. We took a traditional coconut macaroon recipe and jazzed it up a bit with some coconut milk.

16 oz  Sweetened Shredded Coconut
10 oz Sweetened Condensed Milk
4 oz Coconut Milk
1 teaspoon pure vanilla extract
1/4 teaspoon coconut extract
2 extra-large egg white. at room temperature
1/4 teaspoon kosher salt

Coating Chocolate

Preheat the oven to 325 degrees F. Combine the coconut, condensed milk, coconut milk, and the extracts a in a large bowl. Whip the egg whites and salt on high speed in an electric mixer(with whisk attachment) until they make medium- firm peaks. Carefully fold the egg whites into the coconut mixture.

Drop the batter on to sheet pans.  Here at The Cake Boutique we line ours with parchment paper. Bake for 25-30 minutes, until golden brown. Cool and dip bottoms into melted chocolate- let dry and ENJOY!

Wedding Wednesday: Venetian Table

The Venetian table was a staple in Italian weddings as it was a Sicilian tradition called the "Venetian Hour". This was a dessert course that is offered after dinner is finished and the cake is cut. This dessert course typically offers pastries, fruit, cakes and coffee. Venetian table is an abundant  and lavish in both food and decorations.  Traditionally, the table consisted of desserts such as tiramisu, napoleons, cannoli, cheesecakes, fruit logs, and cream cakes. Over time chocolate fountains as well as, ice cream and other various stations focused on individual treats are also popular.  A Venetian table is another type of dessert buffet that appears at weddings and other social events. The presentation of sweets is too intended to be breathtaking in variety.

These are a great addition to a wedding as they add a climax to a delicious dinner. They provide a variety of sweets for your guest so there is something for everyone. It is a great way to incorporate both the grooms and brides favorites along with traditional cultural desserts from their own backgrounds.

All together this dessert table is both stunning and delicious!

Wedding Wednesday: Sentimental Cakes

These days wedding cakes are not just a white one white tiered cake with buttercream piping. They are no longer suck in those formal traditions. Modern wedding cakes include colors, designs, different shapes and some are even very out of the box. Something that is super sweet is when a couple chooses to incorporate something special in their relationship for the design of their cake. For instance, a couple we worked with in the passed included peaches on their cake as they met on a peach farm. Another couple during one of their first dates carved their names into a tree and choose to recreate this in cake. These little sentimental touches make wedding cakes all that more special since they have the added meaning.

For the couple that ordered this cake, they choose to incorporate superman in the theme because the bride nicknamed her groom superman. Did you meet at the shore?! Then this wedding cake would be simple and yet include a special detail about you as a couple!

Tip Tuesday: 5 Tips for Making Perfect Pie Crust

It is that time of year again as people are prepping to buy their turkey and all the fixings for a delicious Thanksgiving meal. And a
Thanksgiving meal just isn't complete without a scrumptious pie for dessert. when making your pies this year remember these few tips for a delicious pie crust!

1. Unlike other baking recipes you want to keep your ingredients cold. This will inhibit gluten to develop in the flour. Use butter right from the refrigerator and ice-cold water.

2. Use the least amount of water possible, just enough to make the pie crust hold together start with the least amount listed in the recipe.

3. Lightly flour your working surface. Then position the rolling pin in the center of the disk roll away from you(12 o'clock  and roll the pin back to the center. Continue the process but with the 6 o'clock, 3 o'clock and 9 o'clock position. Repeat process until the dough is the diameter needed for your pie pan.

4. To prevent browning or burning of edges, cover the pie edge with 2-3 inch stripe of aluminum foil or a pie crust shield.

5. When is doubt call The Cake Boutique to order you Perfect PIE!

Tip Tuesday: 5 Cake Baking Tips for Flawless Cakes

When baking cakes there are a few universal tips that will help you create a flawless cake.

1. Avoid Using Cold Butter: It is important for butter and eggs to be at room temperature for the mixture to emulsify correctly. If you are short on time microwave butter on low short intervals(to ensure you don't melt it) and place eggs into hot water for 10 minutes.

2. Measure Flour Correctly: Flour should be spooned into the measuring cup and then leveled off using a knife or other kitchen utensil. If you scoop flour or don't level it you will end up with more flour than you need.

3. Use a Pastry Brush: Using a pastry brush to butter pans will help with an even coat of grease and an easy clean up!

4. Position Pans Closest to the Center: Pans should be placed in the center of the oven for the best heat circulation as possible. Pans should not touch each other or the oven walls.  This will help for more even baking.

5. Cool Cakes Upside Down: This will help to flatten out the tops and helping during stacking of cakes.  If still too rounded use a serrated knife to remove the top.
